Zesty Chicken-Stuffed Tahdig ⬇️ SCRUMDIDDLYUMPTIOUS RECIPE BELOW ⬇️ Tahdig is a delicious Persian dish that features fragrant, aromatic basmati rice. The rice gets cooked in a large pot with a surface area big enough so that a crispy, golden-brown coating forms at the bottom. Classic tahdig is delicious in its original form, but we thought we'd take its crispy texture and delicious toasted flavor and put our own spin on it! This zesty chicken-stuffed tahdig starts off with a traditional crunchy rice exterior, then we added in a creamy, flavorful chicken and bell pepper filling, and finished the whole dish off in the oven, sealing in all of the rich, tangy flavors. One slice into this impressive tahdig-inspired creation, and you'll never see rice the same way again!

- ⅓ cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 cup water
- 1 cup cooked basmati rice
- ⅔ cup grated parmesan
For the creamy chicken filling:
- 10 oz chicken breast, cut into strips
- ½ yellow bell pepper, sliced
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- ⅔ cup heavy cream
- 2 tsp paprika
- 1 tsp mustard
- 1 tsp tomato paste
- salt & pepper to taste
- 1 tsp chili powder
- vegetable oil for sautéing
