Chicken marinade ingredients:
* 4 medium Shallot onions
* 3 sprigs Scallions
* 1/2 thumb size Ginger
* 6 cloves Garlic
* 2 Scotch bonnet chili
* 1/2 tsp Thyme
* 1/2 tsp Rosemary 
* 1/2 tsp Aniseed
* 1/2 tbsp salt (adjust to taste)
* 1 tbsp all purpose seasoning
* 1 tsp crushed white pepper

*** Oil for deep frying ***

Glaze ingredients:

* chicken stock from parboiled chicken
* 6 tbsp cold pressed coconut
* Juice of half a lime
* 1 tbsp light low sodium soy sauce
* 1 tbsp honey
* 1 tsp minced garlic
* 1 medium onion
* Optional splash of water to thin glaze up
